Fries have such a negative connotation in terms of food, as they're generally fried in litres of artery-clogging oil. However the same crunchy and crispy texture can be achieved at home, with far less fat, but just as much flavour.
Ingredients
Sweet Potato (mine was 450g)
Coconut Oil Spray
Directions
As we're keeping the skin on the sweet potato, be sure to give it a good scrub to remove any dirt
Chop the potato in half length ways, and then into chunks about three inches long and roughly one to two inches thick
Throw the fries into a bowl, spraying lightly with the coconut oil and tossing so they're all evenly coated
Lay on tray and place in a 200 degree Celcius oven, under the grill for 15 minutes
Flip the fries and cook on the other side for the further 15 minutes, then serve
