While I am not coeliac, nor do I have a gluten intolerance, I am always on the look out for gluten free products. Personally, I just find that I feel better, almost lighter, after eating a gluten free meal. My newest find and purchase was this organic millet from Eden Foods.

It is actually a seed, however it's most commonly referred to as a grain. Most millet crops around the world are grown as food for cattle, and you will find it in most bird seed mixes. Don't let this fool you, just because animals eat it, it doesn't mean people can't too.

Millet is a versatile grain as it can be used in both sweet and savoury dishes. Cook it with milk as a warm breakfast cereal, much like oats. Or cook it with vegetable stock and some spices for a flavourful alternative to a rice side dish. You could even grind up the dry grain to make your own millet flour for gluten free baking.
I love to use millet when I have a craving for couscous or rice, but want something a little lighter. Teamed with some steamed veggies and my peanut sauce, it makes a satisfyingly quick and healthy meal.
While millet may not contain as much protein or fibre as quinoa, it is still an excellent gluten-free grain with a complete essential amino acid profile. It is also high in manganese, thiamin B1, phosphorus and magnesium. And at almost a third of the cost of quinoa, it's great for those of you on a budget.

You won't find millet in your local Aussie supermarket, unless you intend on eating bird treats. Perhaps your favourite health food store may stock it, but I find it easiest to buy online, especially since iHerb continues to lower their shipping charges to Australia.
