When baking as a kid, licking the 'leftover' frosting from the bowl was always the highlight. Even now as an adult, I subconsciously always make sure there's extra frosting left in the bowl. I can't help it, my sweet tooth always gets the better of me.
Obviously all of that fat and sugar in a normal butter-cream icing isn't good for you, which is why I chose to recreate it with peanut flour and stevia. The peanut flour acts as what would have been the butter, adding the thick and creamy texture, and the Vitarium gives the frosting its sweetness and delicious chocolate flavour.
Going down the healthy route doesn't mean you have to miss out on your favourite desserts.
Ingredients
1/4 Cup of Peanut Flour
4 tsp Vitarium Chocolate Drink Mix
Splash of Almond Breeze Unsweetened Almond Milk
Directions
Simply mix the peanut flour and Vitarium together with a tiny splash of almond milk until a thick frosting has formed.
NOTE: Don't add too much milk or the frosting will be too runny.
