Baked potatoes stuffed with onion, bacon, sour cream and cheese were an occasional treat as a child, and how I savoured every bite. As I grew up I began to stray from potatoes, believing they were bad for me - quite the contrary. Potatoes are a great complex carbohydrate, pack a punch of fibre, and like all vegetables, full of vitamins and minerals.
The bacon, cheese and sour cream may feature in today's recipe, but you wouldn't miss them. Just a few simple ingredients is all you need for this delicious lentil stuffed sweet potato. Full of protein and fibre, this meal is sure to leave you satisfied.
Ingredients
200g Steamed (or Baked) Sweet Potato
75g Cooked Green Lentils
100g Crushed Tomatoes
30g Diced Onion
40g Diced Capsicum
1 tsp Crushed Garlic
Directions
Saute the garlic, onion and capsicum in a saucepan until softened
Add the tomatoes and lentils, cooking until it has slightly thickened
Re-heat your sweet potato if needed, then fill with the lentils
Makes 1 serve
These sweet potatoes were HUGE, so I scooped out some of the flesh, and am saving it for another meal - maybe my Flourless Sweet Potato Pancakes.
