Coconutty Oats

Today's recipe is rather simple in nature, as it's oats cooked on stove. Not exactly rocket science, is it?

What really makes this meal is the coconut flour. Now, you're probably thinking why I would add flour to this.

Coconut flour is one of those versatile ingredients. It has such a beautiful flavour and scent, that even the smallest amount really helps. It is so finely ground, that eating it as is (ie. not baked into a muffin, for example) actually tastes good.

Coconut flour is also a great way to get some added fibre and even a touch more protein!

Ingredients

40g Oats
1/3 Scoop of Vanilla Protein Powder
1 Egg White
1/3 Cup of Water
1/3 Cup of Lite Coconut Milk
1/2 Tbsp Coconut Flakes
1/2 Tbsp Coconut Flour


Directions

Add the oats, water and coconut milk to saucepan
Cook on a low-medium heat and wait for the oats to absorb the liquid
Once the oats are cooked through, add the egg white, stirring well
Remove from the stove and stir in the vanilla protein powder
Scoop into a bowl and top with the coconut flour and coconut flakes

Makes 1 serve
