Whether you're currently soaking in the Summer rays in the Northern Hemisphere, or shivering through another Winter in Australia, burgers don't discriminate. Who needs meat or animal products to make a burger? Not this girl. Take this basic veggie burger recipe and add your own flair to it. Play around with different herbs and spices and you'll have yourself a burger even meat-eaters will want to try. 1/4 Cup Uncooked Red Quinoa (P) 300g Sweet Potato 50g Red Capsicum 50g Onion 1-2 tsp Crushed Garlic 1/2 De-seeded Jalapeno Directions Cook the red quinoa as per the instructions on the packaging While the quinoa and potato are cooking, prep the other ingredients by finely dicing them Allow the quinoa and potato to cool before handling them Add everything into a bowl and mix thoroughly Shape the mixture into four balls and then pat into burger shapes, around half an inch high Cook however you like: in the oven, on the stove or barbeque, even in a sandwich press (it actually works quite well) You want a nice and crisp shell, and moist on the inside, just like a normal burger Makes 4 burgers Macros per serve 114 calories 3g protein 0.5g fat 23g carbs 4g sugar 3.5g fibre What to eat them with Use in a veggie burger with portebllo mushroom buns and your favourite fillings. Pair with steamed vegetables or salad. Top with pico de gallo (recipe coming soon) and some greek yogurt rather than sour cream. via Stacie Michelle http://stacie-michelle.blogspot.com/2013/08/spicy-sweet-potato-red-quinoa-burgers.html | |||
