When I first came across this recipe, I thought it sounded... interesting. Coconut in a muffin is fairly normal, but kiwifruit? Hm... These muffins were quite nice, to be honest! They're quite coconut-y and the kiwifruit on top adds a nice flavour. They're something summery, something easy - and something different to try! Give these a go - they're quite yummy. {adapted from here} Kiwifruit & Coconut Muffins Makes 8 2 cups self-raising flour 1/2 cup caster sugar 1/2 cup desiccated coconut 1 tbs finely grated lemon rind 90g butter, melted 1 cup buttermilk 1 egg 3 kiwifruit, peeled, thinly sliced crossways 1/2 cup shredded coconut Preheat oven to 200°C. Brush eight muffin pans with melted butter to lightly grease. Combine the flour, sugar, desiccated coconut and lemon rind in a large bowl. Make a well in the centre. Whisk together the butter, buttermilk and egg in a jug. Add to the flour mixture and stir until just combined. Spoon the mixture among the prepared pans. Top with kiwifruit and sprinkle with shredded coconut. Bake in oven for 20-25 minutes or until a skewer inserted into the centres comes out clean.
