quick + easy: white chocolate & banana bread






As you know, white chocolate and bananas go together like peanut butter and jam. Or like cupcakes and frosting. Or even like Oreos and milk. My fave.



This loaf turned out very yummy. It was moist on the inside and the outside was not just chewy, but it also had a subtle caramelised flavour thanks to the white chocolate. The cake retained its moisture for a few days afterwards, so it keeps well when stored in an air tight container.

It's delicious on its own, but is also just as good when smothered butter. Mmmmm.




Quick + Easy: White Chocolate Banana Bread
makes 1 loaf

3 ripe bananas, mashed
1/3 cup melted butter
1/3 cup sugar
1 ½ cups flour
1 egg, beaten
1 tsp vanilla
1 tsp baking soda
½ cup white chocolate chips

Preheat oven to 180C and grease the loaf pan. Mix the bananas and melted chocolate in a bowl. Add the sugar, egg, and vanilla and mix well. Add the baking soda and flour and combine. Finally add the chocolate chips then pour into the loaf pan. Bake for 50-55 minutes or until a skewer inserted comes out clean.
