Banana Nut Muffin

I'm slowly but surely making my way through all of my pantry items. I almost feel like I am doing a daily Masterchef Mystery Box challenge. 

Luckily the judges aren't here to offer their opinions; somehow I don't think they would appreciate how healthy these muffins are. With each muffin you get a decent hit of protein under 100 calories. They're a perfect mid-morning snack for you or your kids. 

In fact, since they're super simple to prepare why not have your kids help you make them?

Pantry left overs
Ingredients

60g Oat Flour
35g About Time Banana Protein Powder (P)
6 tsp Banana Vitarium Drink Mix (P)
20g Chopped Peanuts (P)
1 Egg
1/4 Cup of Almond Milk
1 tsp Baking Powder

Directions

Preheat your oven to 180 degrees Celcius
Mix all the ingredient (except the peanuts) together until well combined
Evenly distribute the mixture between the six cupcake moulds
Sprinkle each with the chopped peanuts
Cook in the oven for 12-15 minutes or until cooked

Makes 6 muffins

Macros per muffin

94 calories
8.3g protein
3.5g fat
6.3g carbs
0.3g sugar
1.5g fibre



Mix up a little chocolate protein powder with water to make sugar free frosting
