Cherry Ripe Pancakes

Looking for a healthy alternative to your favourite Cherry Ripe chocolate bar? Then this recipe is for you.

With no added sugars, the sweetness comes from the stevia in the protein powder and the natural sugars in the cherries. 

With a generous amount of protein, these pancakes are sure to keep you feeling full until lunchtime. Say goodbye to those mid-morning chocolate cravings.

Ingredients

30g Oat Flour
1/2 Scoop of Chocolate Protein Powder
2 Egg Whites (or 1 Egg)
1 Tbsp Coconut Flour
1/2 tsp Baking Powder
Splash of Almond Milk
100g Frozen Cherries
1 Tbsp Unsweetened Coconut Flakes



Directions

Mix all of the pancake ingredients together (except the cherries and coconut flakes)
Allow to stand for 10 minutes
Heat the cherries in a microwave for 3 minutes
Cook the pancakes on a low heat
Plate one pancake and top with a few cherries and some of the syrup
Continue this method until you have a tower of layered pancakes and cherries 
Top with the coconut flakes and the remaining cherry syrup

Makes 1 serve
