Cinnamon Apple Pancakes

You don't need any of those processed sugars to make a delicious pancake recipe. Nature's sugars, in the form of fruit, add all the sweetness you need.

Ingredients

20g Oat Flour
1 Egg (or 2 Egg Whites)
1/2 scoop of MRM Vanilla Protein Powder (stevia-sweetened)
1/2 tsp Baking Powder
Splash of Almond Milk
100g Apple
Ground Cinnamon
Water


Directions

Combine the oat flour, egg, protein powder, baking powder and almond milk in a bowl
Mix well and allow to stand for a few minutes
Heat a non-stick pan and pour in the pancake mixture
While the pancake cooks, peel and finely slice the apple
Put in a microwave-safe bowl with as much cinnamon you desire and a tiny bit of water
Microwave on high for 2-3 minutes
The mixture will be all gooey and almost like a caramel
Plate up your pancakes and top with the cinnamon apples

Make mini pancakes, several larger pancakes, or like I did, one huge pancake which I stuffed with the gooey cinnamon apples and rolled up.
