Lemon & Lime Pancakes with Sugar Free Orange & Grapefruit Marmalade

Yes, I'm finally getting around to sharing the last recipe in a Week of Pancake Recipes. All my computer and Internet issues have been sorted, so look out for more recipes coming your way. I even have some exciting news to report, but I'll leave that for another day.

Ingredients

Pancakes

30g Oat Flour
1/2 Scoop of MRM Vanilla Protein Powder
2 Egg Whites (or 1 Egg)
1/2 tsp Baking Powder
6 Drops of SweetLeaf Lemon Liquid Stevia
Lemon Zest
Lime Zest
Splash of Milk

Marmalade 

1/2 Orange
1/2 Ruby Red Grapefruit
2 tsp Natvia


Directions 

Cut the orange and grapefruit into segments, placing it in a pan with the Natvia
Allow to simmer away and thicken while you get on to making the pancakes




Mix all of the pancake ingredients together, adding as much lemon and lime zest as you prefer




Pour the batter into a hot pan, cooking on both sides


Plate up the pancakes and serve with a generous helping of the marmalade
