Zucchini Pancakes

This Week of Pancake Recipes has been rather rocky and unpredictable with my internet and computer troubles. But, never fear, I'm back with what is Day Four: Zucchini Pancakes.

If you shy away from sweet meals for breakfast, then these pancakes may be up your alley.





Ingredients

200g Zucchini
1 Egg
3 Tbsp Spelt Flour
1 Tbsp Nutritional Yeast
20g Diced Onion
20g Diced Capsicum


Directions
Grate the zucchini into a bowl and then transfer to a sieve
Holding the sieve over your sink, press all the excess water out of the zucchini
When the grated zucchini feels rather dry, add it a bowl with all of the other ingredients
Mix the batter well
Shape into three little patties and place in a low-medium pan
Press the patties down flat, around 1cm thick
Cook well on both sides until nicely browned
When the pancakes are firm to the touch, you know they're ready
Plate up with any toppings you prefer: maybe a poached egg, cheese, spinach, or some salsa like I did

Makes 1 serve
