This Week of Pancake Recipes has been rather rocky and unpredictable with my internet and computer troubles. But, never fear, I'm back with what is Day Four: Zucchini Pancakes. If you shy away from sweet meals for breakfast, then these pancakes may be up your alley. 200g Zucchini 1 Egg 3 Tbsp Spelt Flour 1 Tbsp Nutritional Yeast 20g Diced Onion 20g Diced Capsicum Directions Grate the zucchini into a bowl and then transfer to a sieve Holding the sieve over your sink, press all the excess water out of the zucchini When the grated zucchini feels rather dry, add it a bowl with all of the other ingredients Mix the batter well Shape into three little patties and place in a low-medium pan Press the patties down flat, around 1cm thick When the pancakes are firm to the touch, you know they're ready Plate up with any toppings you prefer: maybe a poached egg, cheese, spinach, or some salsa like I did Makes 1 serve Macros 210 calories 14g protein 5g fat 23g carbs 6g sugar 5g fibre via Stacie Michelle http://stacie-michelle.blogspot.com/2013/07/zucchini-pancakes.html | |||
