Sometimes you just need a little something to munch on before bed. This chia seed pudding is perfect as it's low carb and sugar free, as well as being under 150 calories. Chia seeds are a great plant-based source of omega fatty acids, so forget those fish oil tablets! After dinner snacks don't get much better than this. Ingredients 2 Tbsp Chia Seeds 200ml Unsweetened Almond Breeze Almond Milk 8-10 Drops of Liquid Stevia Directions Mix all of the ingredients together in a bowl or glass Place in the refrigerator for several hours until the seeds are soft and have created that pudding texture Makes 1 serve Macros 150 calories 7g protein 12g fat 12g carbs 0g sugar 11g fibre This is just a basic recipe, so you can make changes where you prefer. Try a different type or flavour of the non-dairy milk you use, and mix and match flavours of liquid stevia; a few drops of chocolate and mint, or chocolate and orange liquid stevias taste great, or just stick with one flavour if you so choose. The amount of milk/liquid you use also alters the structure of the pudding. Chia seeds, as they're soaked, become quite gelatinous and bind together almost like jelly.
