Chocolate Peppermint Brownies






These brownies need no description, really. Anything with chocolate + peppermint tastes amazing. The brownie base is moist and chewy, yet not as naughty as this one.



































The icing, though? That's a different story. It's naughty times two. But when combined with the chocolate brownie, it's very, very yummy. And addic tive. Try stopping at one slice!





































Chocolate Peppermint Brownies

Brownies
125g butter, melted
1/4 cup cocoa powder
1 cup sugar
3 eggs
1tsp vanilla
1 cup plain flour
1tsp baking powder

Icing
3 tablespoons butter, room temperature
2 cups icing sugar
2 tablespoons milk
1/2 teaspoon peppermint flavouring
Green food colouring

To make brownies: heat oven to 180C. Combine the melted butter, cocoa, sugar, eggs and vanilla in a bowl and mix well. Sift in the flour and baking powder and stir until well combined. Pour into a 20-20cm square tin lined with baking paper and bake for 30 minutes or until firm in the centre. Cool, and slice when cold.

To make icing: Using an electric beater, beat the butter until pale and fluffy, then slowly add the icing sugar at low speed. Once the icing sugar is incorporated, increase the speed to medium and beat until well blended.
Add the milk, mint extract and food colouring. Mix well and frost your brownies!



Now go for a long, hard run.
