Vegan yogurts can be rather costly, but did you know you can make them at home? There's no need for starter cultures for this recipe - just a few basic ingredients, which most of you probably already have at home. Going vegan is that little bit easier when you know you're not missing out on anything.
1-2 Tbsp Lemon Juice 1 - 2 Tbsp Sweetener of Choice (Granulated stevia, maple, agave or rice malt syrup) OR 10-15 Drops of Liquid Stevia (flavoured or plain) 1 Cup Coconut Milk (fresh, tinned or Coco Quench will work) 1 Tbsp Corn Flour Pinch of Salt Directions Add the lemon juice to the coconut milk and let it sit for 5 minutes to curdle Whisk in the sweetener, salt and cornflour, ensuring there are no lumps Put in the microwave on high for 90 seconds Remove and whisk again Whisk again and pop it back in the microwave for 30 more seconds Stir one final time and place the yogurt in the fridge to firm up and cool Makes 3 serves Macros per serve (I used Coco Quench and liquid stevia.
