One of my memories of my Grandma is all the delicious things she used to bake. Whenever I went to visit her and my Grandad, their house always smelled divine. Jam & Coconut slice wasn't something my Grandma made very often, which made it all the more special when she did.
While the original recipe calls for butter, sugar and eggs, you will find none of that in my version. The best thing about this slice is that it will leave you wanting more, and being relatively healthy, you won't feel so guilty about going back for seconds.

Ingredients
120g Gluten Free Oats
100g Natvia for Baking
4 tsp Orgran Egg Replacer
8 Tbsp Water
200g Frozen Strawberries
75g Unsweetened Shredded Coconut
Directions
Preheat your oven to 180 degrees Celcius.
Whisk the egg replacer and water together until they're fluffy and divide the mixture evenly between two bowls.
Microwave the strawberries on high for 2-3 minutes, mash them with a fork and refrigerate to cool down and thicken up into a jam.
Take one bowl of egg replacer and whisk in half of the Natvia. Once dissolved, stir in the shredded coconut and then set aside.
Add the oats and the other half of the Natvia to a food processor and pulse until it resembles a flour. Mix all the flour into the remaining egg replacer until well combined. Press the mixture into a baking paper lined tray (10 inch x 7 inch) to form the base.
Using a knife, spread the strawberry jam over the entire base, then sprinkle with the coconut mixture.
Place in the oven on a middle shelf and cook for 30-35 minutes, or until the base is firm and the coconut is nicely browned.
Allow the cool on a wire rack before cutting into sqaures and serving.
