Following up from my Coconut Milk Yogurt recipe, I have for you another vegan yogurt alternative, this time using almond milk. This recipe is a little more simplified, however I think it works just as well. While coconut milk does make for a delicious vegan alternative to cow's milk yogurt, for some it's a touch too high in fat. As well as being lower in calories, a cup of almond milk has a third of the fat than that in a cup of Pureharvest Coco Quench Coconut (and rice) Milk. Ingredients 1 Cup of Unsweetened Almond Breeze Almond Milk 1 Tbsp Cornstarch Sweetener of choice Directions Pour your almond milk into a saucepan with your sweetener of choice and bring to a gentle simmer In a separate bowl mix the cornstarch with a little water or almond milk to dissolve Add the cornstarch mixture to the almond milk and whisk As you continue whisking you will see the milk begin to thicken up Once this happens remove it from the heat and place in the refrigerator to cool Before serving give the yogurt another good stir to bring it together Makes 2 serves Macros per serve 25 calories 0.5g protein 1.5g fat 4g carbs 0.5g fibre Uses Eat as is, topped with some fruits and nuts Add to smoothies for a richer, thicker consistency Use an extra tablespoon of cornstarch to make somewhat of a almond milk panna cotta Note: The yogurt will resemble the texture of a cross between yogurt and custard, it's slightly thicker than cow's milk yogurt. via Stacie Michelle http://stacie-michelle.blogspot.com/2013/09/almond-milk-yogurt-vegan-sugar-free.html | |||
