As promised in my Chocolate & Peanut Butter Frosting post, here's the recipe for the muffins I featured. It wouldn't be Halloween without pumpkin, and that's the secret ingredient for keeping these muffins nice and moist, with that extra hint of natural sweetness.
These are not the prettiest muffins you've ever seen, but the taste makes up for it. Really, that's what Halloween is all about: celebrating really ugly things which we all secretly love.
Ingredients
1 Cup of Oat Flour
120g Steamed Pumpkin
120g Steamed Pumpkin
1 Scoop of About Time Vegan Protien Powder in Chocolate
1/4 cup Norbu
1 Chia Egg
4 tsp Vitarium Chocolate Drink Mix
Splash of Almond Breeze Unsweetened Almond Milk
1 Chia Egg
4 tsp Vitarium Chocolate Drink Mix
Splash of Almond Breeze Unsweetened Almond Milk
Directions
Simply mix all of the ingredients together until they're well combined
Place in a 180 degree Celcius oven and cook for 25-30 minutes
Allow to cool before icing them with the chocolate and peanut butter frosting
